Rocky Road Squares


Now I'm not so good at the whole presentation thing. I am all about taste over looks. When I saw Amanda's Rocky Road Bars over at The Sweet Detail I thought it was both, they looked tasty and pretty!

However mine tasted good but not nearly as pretty as hers. If you want to make some here's the recipe:

Base

1/2 a cup of butter
1 oz dark chocolate
1 cup of flour
1 cup of sugar
1 tsp baking powder
2 eggs 
3/4 cup of chopped nuts

6oz Cream cheese
1/4 cup butter
1/2 cup sugar
2 tbsp flour
1 egg
1/4 cup chopped nuts
6oz dark chocolate chunks
2 cups marshmallows


Melt the chocolate and butter together and then mix in the other ingredients. I spread mine between two loaf tins. Don't bake yet...

Mix the cream cheese, butter, sugar, flour, egg and chopped nuts together and spread over the chocolate base and then top with the chocolate chunks. Bake for 25 mins then sprinkle over the marshmallows and bake for 2 more mins.

While the base is cooking make the frosting:

1/4 cup butter
1/4 cup milk
1oz dark chocolate
2oz cream cheese
3 cups icing sugar

Melt all the ingredients in a pan on a low heat until combined and then remove from the heat and mix in the sieved icing sugar.

When the base mixture comes out of the oven stir over the marshmallows and 'swirl' them into the frosting. Then leave to cool and refrigerate till firm.

Takes a little bit of patience but it turned out yummy! Plus I made most of them for a cake auction at church and they went for the third highest amount! All credit to Amanda though, where I found the recipe. 



The rest did not last long at our house!
